Alexa’s Vegan “Faux-gurt” (EF, DF, V, GF, P)

This thick coconut blend is the perfect replacement for your favorite yogurt! Enjoy as a breakfast parfait or even as creamy dessert when you're craving something a little decadent.



  • 2 cups thawed Young Thai Coconut Meat (Whole Foods frozen section)
  • 1/2 cup coconut water
  • 1 tablespoon fresh lemon juice
  • Pinch of fine grain sea salt
  • Sweetener, to taste (I use honey or coconut sugar depending on desired sweetness)



Add all ingredients into a high speed blender and blend on low, gradually increasing the speed to high, until super smooth. Keep blending until it’s not grainy anymore. Adjust sweetness to taste by adding sweetener if desired and blending again. I add a tablespoon of honey or sugar in the raw and blend on high in my Vitamix.

Spoon the yogurt into an air-tight container and chill in the fridge for at least a couple hours.


Enjoy alone or with fresh fruit. I like blending down blueberries or strawberries and then reducing them on the stove until thick. It creates a fresh, fruit sauce topping. Preserves or fresh fruit also works great! This yogurt is also a perfect dessert option or when you get a sweet craving! It lasts a few days in the fridge in an air-tight container!
